Breakfast inspiration for the Sunday before Christmas. Outrageously delicious and packed with energy.
Makes 6 pancakes
Ingredients:
- 100g (1 cup) of oats
- 2 free range eggs
- 2 ripe bananas
- 3 TBSP self-raising flour
- 1 tsp cinnamon
- 1 splash of milk
- 1 tsp butter or oil to grease the pan
Method:
- blitz the eggs, milk, banana and half the oats in a blender until smooth
- add the rest of the oats, flour and cinnamon and stir until it’s mixed together
- leave the mixture to chill in the fridge for 10 minutes
- grease the frying plan with a little oil
- pour in the batter and cook on a medium heat until golden brown on each side
- top with ingredients and stack!
Topping ideas :
- honey
- peanut butter
- strawberries
- blueberries
- banana
- yogurt (Alpro coconut is a must)

Tip: add a dash more milk if too thick, and a tablespoon of flour if too runny
